Special Occasion Cupcakes

It was my friend's birthday so I made her these yummy cupcakes...

Cake                                                                  Topping
110g butter or margarine,softened                      140g butter, softened
100g caster sugar                                               280g icing sugar
2 eggs, beaten (Free Range!)                             couple of tablespoons of milk
slosh of vanilla extract
110g self raising flour
couple of tablespoons milk

Method

1) Preheat the oven to Gas mark 4/350F/180C
2) Cream together the butter and sugar in a large mixing bowl until pale. Beat in the eggs gradually, and add vanilla extract.
3) Use a metal spoon to fold in the flour, adding a little milk until the mixture is of a dripping sort of consistency.
4) Bake in the oven for 15  minutes, or until golden brown. Leave to cool before doing the topping.
5) For the topping, beat the butter until it's soft , then add half the icing sugar and carry on beating until smooth. Add the remaining icing sugar and milk, until the mixture is smooth and creamy.
6) Put topping onto cakes, using either a piping bag or pallet knife, and decorate with whatever you fancy.
